Notes

9/20/2013 - split final wort between two feremnters with slightly more going into the Chocolate Sour fermenter.
Apple Ale: SG= 1.055, FG = 1.004 Topped up with 1.5 gallons apple juice & 1 gallon water
Chocolate Sour: SG= 1.045, FG = 1.006 Topped up with water
10/18/13 - Transferred Sour onto 4 oz cocoa nibs. I'm hoping the chocolate notes will play nicely with the cherry-pit character that I've had with the Sour Mix blend in the past
10/18/13 - Kegged Apple Ale - winelike apple character with beer background.
1/13/14 - Kegged Chocolate Sour - nice subtle tarness with some dark chocolate and almost roasty character from the cocoa nibs. The color was also deep tan/light brown.
