Notes

10/31/2016 - Brew went fine, chilled to 78 degrees and split wort between two fermenters. Topped up Saison with water and the Apple Ale with 2 gallons of Hy-Vee Apple Juice. Forgot to take a gravity reading, but the Saison is likely around 1.048 and the Apple Ale should be around 1.065.
**Top up apple batch with AJ, spice with cinnamon & spice tincture, back-sweeten with AJ concentrate
12/4 - Kegged Apple Ale & Saison (saved yeast) - Added spice tincture to apple batch along with 1 can of AJ conentrate & kSorbate.
3/22/2017:
Apple Ale - spice notes are subtle, flavor is pretty good overall with nice malt to balance the AJ, a little on the sweeter side from the AJ concentrate, planning maybe keeping until AHA HomebrewCon to serve at club night.
Omega Saison - Subtle spice from the yeast, there is an underlying Brett funk (light barnyard & hay). Really like how this yeast/funk blend performed!
