Notes

9/16/2022 - Brew day - used the last of the 2019 Azacca hops in the whirlpool, so I will use the newer ones in dry hopping. Added hops at flame out and chilled to 185 degrees before leaving for 15 minutes.

9/19/2022 - This batch fermented a little warmer (and faster) than I was anticipating, probably in the mid to upper 70's. Luckily when I checked the yeast profile, the upper recommended temp was 78 degrees. Added dry hops, stirred, and plan to keg in 5 days.

9/23/2022 - Kegged - FG=1.010. This batch ha d a bit more of a bitter bite than I was expecting. I'm hoping it mellows out a bit, but I ended up putting this batch in right away to carb and serve.

10/5/2022 - Still a bit too bitter for my liking, so I'm going to give the keg to Lee, since she liked it when she was over brewing for the IBU comp.

DUMPED!!! - Too bitter and I wasn't going to drink it, so I dumped it after bringing the keg to JCHH
