Notes

10/5/2022 - Brew Day - Mashed a little higher at 156 to promote a little extra residual sugars to balance the hops. Added 1tsp of Calcium Chloride to the mash, which is about 1/3 of what I was using on other beers. I'm wondering if I was adding too much? Added the Magnum hops directly to the boil and then used the hop spider on the later additions, shaking it frequently to help get all the hop goodness into the wort. Chilled to around 72 degrees and add to fermenter, while pitching some saved Sundew yeast.

10/9/2022 - Added 1.5 oz Citra & Mosaic to primary.

10/11/2022 - Stirred hops to make sure they weren't getting stuck in a yeast cake on top of the batch as Sundew has done to me in the past.
