1/17/2023 - I ended up dumping most of this keg. The S-04 yeast never ended up settling, even after using gelatin and waiting a couple weeks. There was a yeasty flavor that I didn't care for. I haven't used S-04 in a few years, but decided to give it one last try after a member of the IBU recommended it. I will not be using it again after this batch.
